Shannon Simpson is a holistic nutritionists and a parent in the Comox Valley. She is also one of the founders of Huband's and SD71's successful Salad Bar programs, one that has been now molded in five other schools.
She offers in-programsclass programming providing fun interactive classes that will teach kids the effects of sugar on their bodies, how eating in rainbow colours can help support different parts of our bodies, and how each of us can play a part in making our planet healthier and in turn make ourselves healthier.
The Change I want to See
Permaculture is an innovative framework for creating sustainable systems. It is the philosophy of working with rather than against nature. The Change I want to See has four workshops they can bring to your school. They provide workshops that take a solutions based approach to the environmental crisis and the workshop empowers students to feel positive and take action. They will help to identify ways to make schools more sustainable, how they can become more active and healthier, to learning how to grow their own food.
Lush Valley supports the Comox Valley in gaining food-systems and knowledge to increase food security, self-sufficiency, and local food production across the region.
